S'more Krispie Treats

I love anything s'more related and when I'm in the mood for a rice krispie treat I always look for a new version. These might be my favorite version that I've found. Its crispy, chocolaty, and it has that yummy toasted marshmallow fluff on top to make it even more sweet and delicious. A perfect summer dessert when you're in the mood for s'mores and there's no fire pit to make them!


S'more Krispie Treats

3 Tablespoons Butter
4 cups Mini Marshmallows
5 cups Rice Krispies
1 cup Golden Grahams
1/2 cup Mini Chocolate Chips

4oz Semisweet Chocolate
1 cup Marshmallow Fluff

1. Grease a 9x13 pan. In a large pot melt the butter over medium heat until melted. Add in the marshmallows and stir until melted.
 
2. Add in the Rice Krispies and Golden Grahams. Stir until the cereal is completely coated. Add in the mini chocolate chips and quickly stir and press into the prepared pan.
 
3. Melt the semisweet chocolate in the microwave at 50% power for 30 seconds at a time, stirring until melted. Spread over the Rice Krispie treats. Refrigerate until the chocolate is solid.
 
4. Spread the marshmallow fluff over the chocolate and then using a kitchen torch brown the marshmallow. Cut into bars and serve.

Oven S'mores and Secret Recipe Club

This month for the Secret Recipe Club I got Opera Singer in the Kitchen! It is a great site! The food is healthy, creative and looks delicious!


So I went through her site and she had s'mores that were vegetarian. I changed my so it more my style and what I like. But there are so many good recipes you need to get over there and look around!


Oven S'mores

1 whole Graham Cracker
1 large Marshmallow
2 pieces of Hershey Chocolate

1. Turn oven to broil. Move rack to the highest rack in the oven. Break graham chrocker in half and place on a cookie sheet and put marshmallow on top. Put in the oven and watch until the top is brown enough for your taste. 

2. Put chocolate pieces on top and put back in the oven just until the chocolate looks like it starts to melt. Remove and let cool for about a half hour. Put the other half of the graham cracker on top. Enjoy!

S'mores Popcorn

We had to end this week with a bang! S'mores popcorn! I am in love with all things S'mores as everyone knows so when i found this recipe I was excited. It starts with this Caramel Popcorn and is topped with marshmallows, golden grahams, and lots of chocolate! Its delicious people. Its crunchy from the golden grahams and popcorn, the marshmallows add some softness to all the crunchy and the silky smooth chocolate brings it all together. The next time you make popcorn make this!

3 cups Mini Marshmallows
3 cups Golden Graham Cereal
1 - 12oz pkg Semi Sweet Chocolate Chip

1. Spread the caramel popcorn on 2 parchment lined cookie sheets. Sprinkle the marshmallows, golden grahams on top of the caramel popcorn.

2. In a microwave safe bowl place the chocolate chips and melt on 50% power in 30 second increments stirring in between each until melted. Then drizzle the melted chocolate over the popcorn. Put in the fridge to set the chocolate and eat!

S'mores Cupcakes

We have been having s'mores desserts a lot and I can't get enough!  This is one one of my favorites! It's a rich, moist cupcake, a layer of creamy chocolate, and smooth, sticky marshmallow frosting. Its so delicious. Perfect for an end of summer barbeque!


S'more Cupcakes

1 cup Graham Crackers, crushed
2 Tablespoons Butter, melted
2 Tablespoons Granulated Sugar
6 (1.55 oz) Hershey Milk Chocolate Bars
2 cups Mini Marshmallows, for garnish

Combine crushed graham, butter and sugar in a small bowl and mix until combined. Divide mixture equally between 24 cupcake liners.

Incredible Chocolate Cake pour into 24 cupcake liners, filling 2/3 of the way full and bake for 18-22 minutes, making sure to not overbake. Cool completely.

Melt 4 Hershey chocolate bars and spoon on top of the cupcakes.

Marshmallow Frosting

1 cup Butter, room temperature
2 cup Marshmallow Fluff
4 cups Powdered Sugar
4 Tablespoons Milk

1. Mix butter and marshmallow fluff until smooth on medium speed until smooth. Slowly add in powdered sugar with mixer on low.

2. Add in milk and turn speed up to medium and mix until all combined and smooth.

Pipe frosting on top of melted chocolate. Place 3 or 4 mini marshmallows and using a kitchen torch brown if desired and place 1 piece of Hershey chocolate bars on top of each cupcake for garnish.

S'more Whoopie Pies

You cant miss with a whoppie pie and s'mores are so simple and so delicious. Everything about these are soft and fluffy. The cookie has the taste and texture of a graham cracker. The chocolate is soft and the marshmallow is light, fluffy, and sweet. A delicious version of a s'more without having to make a fire!


S'more Whoopie Pies

Graham Cracker Whoopie
1 1/2 cups Graham Flour
3/4 cup All-Purpose Flour
1 1/2 teaspoons Baking Powder
1/2 teaspoon Salt
4 Tablespoons Unsalted Butter, at room temperature
4 Tablespoons Vegetable Shortening
1 cup packed Brown Sugar
2 large Eggs
1/2 cup Buttermilk
2 Tablespoons Milk
1 teaspoon Baking Soda
1 teaspoon White Vinegar
1 teaspoon Pure Vanilla Extract

Marshmallow Frosting
1/2 cup Butter, room temperature
1 cup Marshmallow Creme
2 cups Powdered Sugar
2 Tablespoons Milk

4 Hershey Chocolate Bars

Whoopie Cookies
1. Preheat oven to 375 degrees. Line two baking sheets with parchment paper.

2. In a medium bowl, whisk together both flours, baking powder, and salt and set aside. In the bowl of a stand mixer, beat the butter, shortening and brown sugar until light and creamy, about 3 minutes. Add the eggs and the buttermilk and beat until combined.

3. In a measuring cup, combine the milk, baking soda, and vinegar. With your mixer on low and add half of the flour mixture and mix until just combined. Mix in the milk mixture. Add in the remaining flour mixture just until just combined. Add the vanilla and mix on medium speed for about 2 minutes, until combined.

4. Drop tablespoon sized dollops of the dough onto the baking sheets, about 2-inches apart. Bake for 8 to 10 minutes, until the tops are firm. Remove from oven and let cool on the baking sheet for 5 minutes then move to a wire rack to cool completely.

Marshmallow Frosting
Mix butter and creme on medium speed until smooth. Slowly add in powdered sugar with mixer on low. Add in milk and turn speed up to medium and mix until all combined.

Melt chocolate Hershey bars on 50% power in 30 second increments stirring until melted.

Assembling the Pies
Spread a layer of chocolate the flat side of one of the cakes. Pipe marshmallow filling in the center onto another flat side of one of the cookies leaving room for it to spread out when they are sandwiched together. Repeat with the rest of the cakes and filling.

Golden Graham S'mores

Golden Graham's are one of my favorite cereals and combined with marshmallows and chocolate, it cant really be beat in my mind. So when I saw this recipe it called to me. Really. I could hear it.


Golden Graham S'mores

1/4 cup Butter
1 - 10.5oz bag Mini Marshmallows, plus 2 cups
7 cups Golden Graham Cereal
2 cups Milk Chocolate Chips

1. Spray a 9x9 pan with cooking spray. Melt butter in a large stock pot over low heat.

2. Mix in the bag of marshmallows continue stirring until melted. Remove from heat and stir in Golden Graham cereal. Let sit for 2 minutes.

3. Pour in 2 cups of marshmallows and stir until combined then pour in milk chips and stir until combined. When completely mixed, pour into prepared pan and press evenly. Let cool before cutting into squares.
