Traditional Scottish Trifle

Have you ever had a Scottish trifle? Well, it's more well known as an English trifle but the trifle was invented by the Scottish and I'm half Scottish so, ours is a Scottish trifle. It's a dessert that we have at every family get together. My Auntie Cheryl makes a delicious trifle. I'm not sure what her recipe is but mine is just as amazing! 

It's pound cake, strawberries, and mandarin oranges in strawberry jell-o. Then it has a thick layer of homemade custard topped with bananas and whipped cream. Its amazing!  All the flavors and textures eaten together make the perfect mouthful. Its perfect!


Traditional Scottish Trifle

Jell-O
2 cups cubed Pound Cake
1 large box Strawberry Jell-O
1 small can Mandarin Oranges
1 1/2 cups Strawberries, hulled and diced

Custard
4 cups Heavy Cream
8 Egg Yolks
2 whole Eggs
1/4 cup Granulated Sugar
1 Teaspoon Pure Vanilla Extract

2 Bananas, sliced

Whipped Cream
1 1/2 cups Heavy Cream
1/3 cup Powdered Sugar
1 teaspoon Pure Vanilla Extract

Make the jell-o using the quick set method adding in the oranges and strawberries. Pour into the trifle bowl before it sets too much. Refrigerate 2 hours.

In a large heavy bottomed pan pour in the heavy cream and heat over medium low stirring constantly.

In a separate bowl whisk together the egg yolks, eggs, and sugar. Just before the cream starts to boil take the pan off of the heat. Pour half of it into the egg mixture whisking constantly. Pour back into the pan and return and heat over medium low. Cook for 10 to 15 minutes, until thickened and coats the back of a wooden spoon. Put plastic wrap on the surface and refrigerate while you make your whipped cream.

Whip the heavy cream until it starts to thicken and add the powdered sugar and vanilla. Continue to whip until stiff peaks form.

When the custard is cool pour it on top of the jell-o in the trifle bowl. Top with the sliced bananas then the heavy cream. Refrigerate until you're ready to serve.

Patriotic Poke Cake

I have another super cute recipe for the 4th of July that is patriotic and fun! The cake is a sweet strawberry vanilla, and the topping is white chocolate and creamy. Topped with strawberries its a delicious combination!

1 box White Cake Mix , made and cooled
1- 3oz box Strawberry Jell-O
1 cup Boiling Water
1/2 cup Cold Water
1- 3oz box White Chocolate Instant Pudding
1/3 cup milk
1- 8oz container Cool Whip, thawed
1 cup sliced Strawberries

Pierce cooled cake with a skewer every 1/2 inch. In medium bowl stir together gelatin and boiling water until dissolved. Stir in the cold water. Pour over the cake. Refrigerate at least 3 hours.
 
In large bowl, combine pudding mix and milk until well blended. Fold in whipped topping. Spread over cake. Place strawberries on top of cake. Store covered in the refrigerator.

Red, White, & Blue Jell-O

This is so easy and fun for kids for the 4th of July. There might not be an easier way to eat something patriotic than Jell-O and Cool Whip.

1 - 3.2oz pkg Strawberry Jell-O
1 - 3.2oz pkg Blue Raspberry Jell-O
1 - 8 oz container Cool Whip

1. Prepare Jell-O as directed on the package in 2 separate 8x8 dished sprayed with baking spray. Place a piece of saran wrap directly on the Jell-O to prevent a skin from forming. 

2. After the Jell-O is set cut into 1 inch squares. Layer the Jell-O and Cool Whip in individual cups... Red Jell-O, Cool Whip, Red Jell-O, Cool Whip, and top with Blue Jell-O. Keep refrigerated.

Cottage Cheese Jell-O Salad

We always have this at summer barbeques and it's the easiest jell-o salad I know how to make. Its got texture from the cottage cheese and it has refreshing juicy bursts from the mandarin oranges mixed through.


Cottage Cheese Jell-O Salad

1 - 16oz carton Cottage Cheese
1 - 8oz carton Cool Whip
1 - 3oz pkg Raspberry Jell-O
2 small cans Mandarin Oranges

Mix cottage cheese with Jell-O until it dissolves. Fold in thawed Cool Whip. Fold in mandarin oranges. Refrigerate for at least 1 hour.

Raspberry Pretzel Jell-O

It has been warm this week and that makes me want summery foods. Jello is one of those foods. This jello is sweet, tangy, and creamy with some crunch from the pretzels. Its at the top of my favorite Jell-O's list.


Raspberry Pretzel Jell-O

2 cups Pretzels, crushed
1 cup Granulated Sugar, divided
1/2 cup Butter
1 – 8oz pkg Cream cheese, room temp
1 – 8oz container Cool Whip
1 – 8oz can Crushed Pineapple
6oz pkg Raspberry Jell-O
2 cups Boiling Water
3 cups Frozen Raspberries

1. Combine 1/2 cup granulated sugar and butter in a small saucepan and melt on low until sugar has dissolved. Let cool slightly and mix with crushed pretzels. Bake at 350 for 6 minutes and let cool.

2. Cream together cream cheese, 1/2 cup sugar, and pineapple. Add cool whip, mix, and spread on top of cooled crust.

3. In a medium bowl add packet of Jell-O and pour boiling water an whisk until dissolved. Add raspberries and mix well. Refrigerate for about 15 minutes and pour on top of cream cheese layer. Refrigerate until set, about 4 hours.
