Oreo Chocolate Chip Cookies

I'm posting over at Sawdust and Embryos today! I have the recipe for a cookie, a soft, cakey cookie with lots of chocolate chips. They taste like cake but are so much easier to eat. And who doesn’t love a cookie with Oreos and chocolate chips?!

Cookies & Cream Muddy Buddies

One of my favorite cookies are Oreos so when I decided to make all of these muddy buddies I knew that I had to make a cookies and cream version. This has 2 different kinds of chocolate chips and lots of sweet Oreo crumbs on the outside. These are a must make, just try not to eat them all in one sitting!

5 cups Corn Chex, divided
5 oz White Chocolate Chips
5 oz Semisweet Chocolate Chips
1 teaspoon Shortening, divided
1 cup Powdered Sugar, divided
8 Oreos, finely crushed, divided

1. In 2 separate medium bowls put 2 1/2 cups of corn chex in each. In a small bowl melt the white chocolate chips and 1/2 teaspoon shortening, stirring every 30 seconds until melted. Do the same with the semisweet chocolate chips.

2. Cover the chex with the melted chips and mix until covered. In 2 separate ziploc bags put 1/2 cup of powdered sugar and 1/2 of the Oreo crumbs. Pour in the chocolate covered chex mixes and shake until completely combined.

Oreo Pudding Layered Dessert

Oreo, chocolate pudding, cream cheese, and cool whip. Its light, airy, chocolatey, and delicious! Its pretty easy and if you are taking it to a BBQ you should probably bring 2 or you might not get any.... That's what happened to me. People really love this!

1 pkg Oreos
1/2 cup Butter, melted
2 - 3oz pkgs Instant Chocolate Pudding
3 1/4 cups Cold Milk
2 - 8oz containers Cool Whip
1 - 8oz pkg Cream Cheese, softened
1 cup Powdered Sugar
 
1. Crush all Oreo cookies in a food processor until crushed. Save 1/2 cup of the crumbs for the topping. Combine the remaining crumbs and the melted butter in a small bowl, mix, and press into a 9x13 pan to make the crust.
 
2. In a medium bowl, whisk together the pudding mix and milk. Place in the fridge. In another bowl blend cream cheese until smooth. Add powdered sugar and mix until combined. Fold in one container of Cool Whip. Spread over the crust. Then spread your pudding over the cream cheese mixture. Top with the other Cool Whip. Sprinkle the 1/2 cup reserved Oreo crumbs over top.

No-Bake Oreo Cheesecake

I am usually not a fan of no-bake cheesecakes but this was so delicious! This is the most smooth, the lightest, and the creamiest no-bake cheesecake I have had.


No-Bake Oreo Cheesecake

Crust:
1 1/2 cups Oreos, crushed
3 Tablespoons Granulated Sugar
7 Tablespoons Butter, melted

Cheesecake:
2 1/4 cups Heavy Cream
2 - 8oz pkgs Cream Cheese, softened
2/3 cup Granulated Sugar
1/2 teaspoon Salt
2 Tablespoons Lemon Juice
2 Teaspoon Pure Vanilla Extract
3/4 cups Oreos, crushed

Crust: 
Combine the Oreo crumbs with the sugar. Add melted butter and blend until combined. Press into a springform pan and set aside.

Cheesecake:
1. Beat heavy cream until they form medium peaks and set aside.

2. In a separate bowl add cream cheese, sugar, salt, vanilla, and lemon juice to a bowl and beat with a paddle attachment until smooth.

3. Add cream cheese mixture to heavy cream and beat until incorporated. Fold in Oreos.

4. Fill pan and refrigerate for 6 hours or overnight for best results. Serve with whipping cream.

Cookies and Cream Cupcakes

I try and try new cupcake recipes and this is one of my favorites. The cake is so soft and the Oreo bits in the cake add extra flavor and texture. And the frosting is so smooth and creamy, just extra deliciousness.



Cookies and Cream Cupcakes

For the cupcakes:

24 Oreo halves, with cream filling attached
2 1/4 cups All-Purpose Flour
1 teaspoon Baking Powder
1/2 teaspoon Salt
8 Tablespoons Butter, room temperature
1 2/3 cups Sugar
3 Large Egg Whites, room temperature
2 teaspoon Vanilla Extract
1 cup Milk
20 Oreos, coarsely chopped

For the frosting:
8 oz Cream Cheese, room temperature
6 Tablespoons Butter, room temperature
1 Tablespoon Vanilla Extract
4 cups Powdered Sugar, sifted
2 Tablespoons Heavy Cream

For garnish:

24 Oreo cookie halves
Oreo Crumbs

Cupcake...
1. Preheat oven to 350 degrees. Line two cupcake pans with 24 liners. Place an Oreo half in the bottom of each cupcake liner, cream side up. 

2. In a medium bowl add flour, baking powder and salt. Stir together with a fork and set aside. In the bowl of an electric mixer, combine the butter and sugar. Beat together on medium-high speed until light and fluffy, approx. 2 minutes. Blend in the egg whites one at a time, beating well after each addition. Blend in the vanilla extract. With the mixer on low speed, beat in half of the dry ingredients just until incorporated. Add the milk and beat just until combined, then mix in the remaining dry ingredients. Gently fold in the coarsely chopped Oreos with a rubber spatula until combines, do not to over mix.

3. Scoop the batter evenly between the prepared cupcake liners. Bake for 18-20 minutes, rotating the pans halfway through, until a toothpick in the center comes out clean. Cool for 5 minutes in the pan, then transfer to a wire rack to cool.

Frosting...
1. Combine the cream cheese and butter in the bowl of an electric mixer and beat on medium-high speed until smooth, about 1 minute. Add the vanilla extract. Beat in the powdered sugar until smooth, 1-2 minutes.

2. Add the heavy cream to the bowl and beat on med-low speed just until incorporated, then increase the speed to medium-high and whip for 4 minutes, scraping down the sides of the bowl as needed.

3. Frost the cooled cupcakes as desired. Sprinkle with Oreo crumbs and garnish with Oreo halves.

Triple Chocolate Oreo Bars

Get ready for chocolate overload!! Oh my, these are so good. I love Oreos and and the addition of more chocolate doesn't hurt. Such a delicious sweet treat.

1-16.6oz pkg Oreo Cookies
1/2 cup (1 stick) Butter, melted
1-14oz can Sweetened Condensed Milk
1 teaspoon Vanilla 
1/4 teaspoon Salt
1 cup Semi-Sweet Chocolate Chips
1/2 cup Milk Chocolate Chips
1/2 cup Mini Chocolate Chips
1 cup White Chocolate Chips, melted

1. Preheat oven to 325 degrees. Line 9x13 pan with foil, shiny side down, and spray with a non-stick spray. 

2. Crush all but 8 Oreos in a food processor. Place the crushed Oreos into a medium bowl and salt and melted butter stir until combined. Press the Oreo mixture into the prepared pan. Coarsely chop the remaining 8 Oreos and set aside. 

3. In a double boiler, just a glass or metal bowl over a pan of boiling water, add the sweetened condensed milk, semi-sweet chocolate chips, milk chocolate chips and the vanilla. Stir until completely melted. Remove bowl from heat. Pour the melted chocolate mixture over the Oreo crust in the pan. Sprinkle with mini chocolate chips and the coarsely chopped Oreos over the chocolate mixture. Press down gently on the chips and Oreos. 

4. Bake for 20-22 minutes. Cool pan on a wire rack for 1 hour. Melt the white chocolate chips and drizzle over the bars. Chill in the fridge until cooled completely.
