Scotcheroos

Have you tried these Scotcheroo Muddy Buddies? Well if you haven't you should, these are the same flavors just gooier. Which may make them better... butterscotch, peanut butter, and chocolate. Sweet, salty, gooey, and crunchy. Its a quick to make and so delicious!

 6 cups Corn Chex
1 cup Corn Syrup
1 cup Granulated Sugar
1 1/2 cups Peanut Butter
2 cups Semi-Sweet Chocolate Chips
2 cups Chocolate Chips
1/2 cup Peanut Butter
1 teaspoon Pure Vanilla Extract

1. Grease a large bowl and pour in your chex. Line a baking sheet with a silpat mat or parchment paper. 

2. In a small saucepan, over medium heat, add in the corn syrup and sugar and stir. Bring to a boil and remove from heat. Add in the 1 1/2 cups peanut butter and stir. Pour over the cereal and stir. Spoon onto prepared pan.

3. In a double boiler, combine the chocolate chips, butterscotch chips, 1/2 cup peanut butter, and vanilla. Stir until all of the chips are melted. Spoon over your cereal piles. Let cool to room temp.

Peanut Butter Cheerio Treats

This is a quick and super easy snack or treat(cause there's a lot of sugar). But since Cheerios is a cereal I think its snack appropriate:) Its sweet, full of peanut butter flavor, and has a great crunch from the cheerios. You'll love these!

1 cup Granulated Sugar
1 cup Corn Syrup
1 cup Creamy Peanut Butter
1 teaspoon Pure Vanilla Extract
5 cups Honey Nut Cheerios

1. Put cheerios in a large bowl. In a medium saucepan over medium heat combine the sugar and corn syrup. Stir and bring to a boil. Let boil for 1 minute and then remove from heat.

2. Add the peanut butter and vanilla. Stir. Pour over cheerios and mix until completely covered. Drop spoonfuls onto parchment or a silpat mat. Let cool before eating!

Scotcheroo Muddy Buddies

Recently I became a little obsessed with Scotcheroos. There are so many flavors in one little treat, butterscotch, peanut butter, and chocolate. And what a better way to eat all of those delicious flavors than in my favorite snack! Sweet, crunchy, a mouthful of deliciousness.

8 cups Corn or Rice Chex
1/2 cup Semisweet Chocolate Chips
1/2 cup Butterscotch Chips
1/3 cup Peanut Butter
1/2 cup Light Corn Syrup
1/4 cup Butter
1/4 teaspoon Pure Vanilla Extract
1 1/4 cups Powdered Sugar

1. In a medium saucepan over medium heat combine chocolate chips, butterscotch chips, peanut butter, corn syrup & butter, stirring constantly until the all of the chips are melted. Then stir in the vanilla.

2. In a very large bowl put in the chex. Pour the chocolate mixture over and mix until completely and evenly coated.

3. Pour the coated cereal into ziploc bags and add in the powdered sugar close and shake until coated.

Peanut Butter Brownie Muddy Buddies

Are you ready for one of the sweetest weeks?! Cause its all Muddy Buddies are here this week!  5 different flavors all sweet and delicious. Easy to make and such a fun snack.

Today I made a peanut butter brownie muddy buddies. The peanut butter is more powerful than the brownie part but its peanut buttery, chocolatey and delicious to eat!


Peanut Butter Brownie Muddy Buddies

2 1/2 cups Corn Chex
1/2 cup Milk Chocolate Chips
1/4 cup Creamy Peanut Butter, creamy
1/2 teaspoon Pure Vanilla Extract
1/2 cup Boxed Brownie Mix

1. Pour cereal into a medium bowl and set aside. In the microwave, in a heat proof bowl, melt the chocolate chips, peanut butter, and vanilla. Stirring every 30 seconds until smooth.

2. Pour the melted chocolate mixture over the cereal and fold until completely covered. Then pour into a gallon size ziploc bag and add the brownie mix, shake until coated. Add cut up peanut butter cups if desired.

Peanut Butter Eggs

This is a sweet, fun idea to do for Easter. Though, you could do it for any holiday cause peanut butter in any shape is delicious. These are sweet and salty with some graham cracker crumbs for texture. Enjoy!


Peanut Butter Eggs

1 1/4 cup Creamy Peanut Butter
5 Tablespoons Butter, room temp
3/4 cup Graham Cracker, crushed to fine crumbs
1 cup Powdered Sugar
1/2 teaspoon Sea Salt
14 oz Semisweet Chocolate

1. In the bowl of a stand mixer, mix together peanut butter, butter, graham cracker crumbs, powdered sugar and salt until well combined.
2. Place dough on wax paper and top with another piece of wax paper. Roll about 1/4 inch thick. Remove top piece of wax paper and using an oval cookie cutter, cut out your eggs and place on wax paper lined pan. Re-roll and cut until all of your scraps have been used.
 
3. Place eggs in the freezer for about one hour. Melt chocolate according to instructions on package. Using a fork, dunk each egg in the chocolate. Use a toothpick to push the egg off the fork onto wax paper lined baking sheet and refrigerate until set.

Chewy Peanut Butter Chocolate Bars

I am so excited for the recipe I have to share today from the Secret Recipe Club! I was assigned BCMom's Kitchen this month. Her name is Anna and she has so many good recipes. She is trying to have more meals at home and make them easy and delicious at the same time. The recipes I tried from her site, and by the look of all of the other recipes, she is succeeding! 

So it was hard to choose what to make. I narrowed it down to this Hearty Soup and these Gooey Chocolate Peanut Butter Bars and I ended up making both. You can see what I chose to share today and I will share the soup in the future, but I will say I made good choices. These bars have a flaky crust with a sweet and chewy peanut butter/chocolate chip topping. They disappeared really fast, they were so good! I will be going back to this site to make more things!


Chewy Peanut Butter Chocolate Bars

Crust
3/4 cup All-Purpose Flour
1/3 cup Granulated Sugar
1/4 cup Cornstarch
1/2 cup Butter, soft but still cold

Filling
2 Eggs
1/2 cup Corn Syrup
1/2 cup Brown Sugar
1/4 cup Peanut Butter
1 teaspoon Pure Vanilla Extract
1/4 teaspoon Salt
1/2 cup Semisweet Chocolate Chips

1. Preheat oven to 350 degrees and grease a 13x9 inch pan.  In a medium bowl whisk together flour, sugar, and cornstarch. Cut butter in until its crumbly. Press into prepared pan. Bake for 15 minutes or until lightly brown.

2. In the bowl of a stand mixer beat eggs, corn syrup, brown sugar, peanut butter, vanilla and salt until well combined. Stir in the chocolate chips. Pour over the cooked crust and put back into the oven.

4. Bake for 20 to 25 minutes, or until lightly brown. Let cool completely on wire rack and cut into bars.

Peanut Butter Bars

The peanut butter desserts continue in our house. My mum hates peanut butter desserts. So when I took these for dessert on Sunday I thought they would be quickly shot down. She works at the high school and she told me she only eats school lunch on the days they have the peanut butter bars. Apparently she loves them and she was thrilled I made them, I had no reason to be nervous I guess. Moral of the story, they are so good even people that hate peanut butter desserts will like them. Sweet, crunchy, peanut buttery, and topped with chocolate. Its just about the perfect dessert. You'll love them.


Peanut Butter Bars

1 cup Granulated Sugar
1 cup Brown Sugar, packed
1 cup Butter, room temp
1 teaspoon Pure Vanilla Extract
2 Eggs
2 1/2 cups Peanut Butter, separated
2 cups Old Fashioned Oats
2 cups All-Purpose Flour
1 teaspoon Baking Soda
1 teaspoon Salt

1. Preheat oven to 350 degrees. Grease a 18x13 jelly roll pan. Cream together butter and sugars until light and fluffy. Add in the vanilla, eggs, and 1 cup of peanut butter and mix until well combined.

2. Whisk together oats, flour, baking soda, and salt then add to the wet mixture and mix until just combined. Spread onto the prepared jelly roll pan. Bake for about 15 minutes or until golden brown.

3. As soon as the crust comes out of the oven spread the remaining 1 1/2 cups peanut butter on top. Cool to room temp and the peanut butter is solid again.

Chocolate Frosting

1/2 cup Butter, room temp
1/2 cup Milk
2 tsp Pure Vanilla Extract
7 Tablespoons Cocoa
4 cups Powdered Sugar

Combine all ingredients and beat until smooth. Spread on top of cooled bars.

Chubby Hubby Bars


I've been on a bit of a peanut butter kick this last week. It started with these bars...


The chocolate is sweet and creamy and the peanut butter and the pretzels are salty and crunchy. Its a perfect combination. Plus they look so cute with the pretzel on top!

Cookie Crust
3/4 cup Shortening
2 Tablespoons Milk
1 1/4 cup Brown Sugar, packed
1 Egg
1/4 cup Malted Milk Powder, Original
1 1/2 cup All-Purpose Flour
1/2 teaspoon Kosher Salt
3/4 teaspoon Baking Soda

Chocolate Fudge
1- 14oz can Sweetened Condensed Milk
2 Tablespoons Unsalted Butter
1- 12oz bag Milk Chocolate Chips
1/3 cup Creamy Peanut Butter
60 Pretzels

1. Preheat oven to 375 degrees. In large mixing bowl, add the shortening, milk and brown sugar and beat until well combined. Add the egg and beat until combined. In a separate bowl whisk together the malted milk powder, flour, salt and baking soda. Add into the egg mixture and beat until just combined.

2. Press onto a 15 x 10 inch cookie sheet. Bake for about 18 minutes or until browned. Remove from oven and let cool.

3. In large sauce pan, heat the sweetened condensed milk and butter until just warm over medium low heat. Add in the chocolate chips and mix until smooth, whisking constantly. Pour onto the cookie crust.

4. In microwave safe bowl, melt the peanut butter for 30 seconds and drizzle it over the fudge and then press in the pretzels. Refrigerate for at least 2 hours before serving.

Muddy Buddy Truffles

Muddy buddies are one of my favorite snacks. These are a fun spin on them. The peanut butter with the chocolate is creamy and the powdered sugar give it that extra sweetness.


Muddy Buddy Truffles

1/4 cup Butter, softened
1/4 cup Creamy Peanut Butter
1/2 cup Brown Sugar
1/4 cup Granulated Sugar
2 Tablespoons Milk
1/2 teaspoon Pure Vanilla
1 cup Flour
2 cups Semisweet Chocolate Chips
1/2 cup Butter
1 1/2 cups Powdered Sugar
1. In a mixer, beat the 1/4 cup of butter and peanut butter until smooth. Add sugars and beat on medium until fluffy. Add milk and vanilla and beat on medium until combined. Add flour and beat until combined.

2. Roll mixture into 1/2 tablespoon sized balls and place on a wax paper lined baking sheet. Place in the freezer for 20 minutes, just long enough to firm up.

3. Place powdered sugar in a small bowl. In a microwave safe bowl, heat chocolate chips and 1 stick of butter, stopping every 20 seconds to stir. Once melted dip the cookie dough balls in the chocolate, one at a time, removing by sliding a fork underneath. Immediately place in the powdered sugar, and quickly coat. Place on wax paper lined baking sheet.

Krispie Peanut Butter Brownies

The topping on the brownie is crispy and creamy, and I will be making these again. They are really good, were gone in 15 minutes... and I only got 1!


Krispie Peanut Butter Brownies

1 Box Brownies
1 cup Reese’s Peanut Butter Cups, chopped
1 1/2 cup Milk Chocolate Chips
1 1/2 cup Creamy Peanut Butter
1/2 Tablespoon Butter
2 cups Rice Krispies Cereal

1. Prepare brownies following the directions on the box. Bake for 25 minutes in a 9 x 13 dish. Remove from oven and top with chopped peanut butter cups, and bake for 5 more minutes.

2. While the brownies finish baking, melt chocolate chips, peanut butter and butter in 30 second increments stirring inbetween until chips are melted. Stir in the Rice Krispies. 

3. Remove the brownies from oven and pour the chocolate mixture over the top. Refrigerate for 2 hours before serving.

Chocolate Peanut Butter Cupcakes

I am being featured today on "Or so she says...". I did a simple apron tutorial. Go check it out! 

Peanut butter overload. That's it plain and simple. For someone that loves peanut butter this is the perfect amount of deliciousness. 



Chocolate Peanut Butter Cupcakes

Cupcakes
1 Devils Food Cake Mix
3 Large Eggs
1/2 cup Butter
1 cup of Water

1. Preheat oven to 350 degrees. Melt butter in the microwave. Combine all ingredients in a large bowl. Mix batter on low for 1 minute, then on high for 1 minute.
2. Fill cupcake papers 2/3 full. Bake for 20 minutes or until a toothpick comes out clean. Let cool.

Chocolate Ganache 
3/4 cup Semisweet Chocolate, finely chopped
3/4 cup Bittersweet Chocolate, finely chpped
1/2 cup Heavy Cream

Bring whipping cream to boil over high heat. Pour boiling cream over chopped chocolate and stir until chocolate melted. If your ganache is too thick to spread add more cream.

Peanut Butter Frosting
1 cup Powdered Sugar
1 cup Creamy Peanut Butter
5 Tablespoons unsalted Butter, at room temperature
3/4 teaspoon Vanilla Extract
1/4 teaspoon Salt
1/3 cup Heavy Cream

Combine the powdered sugar, peanut butter, butter, vanilla, and salt in a bowl. Mix on medium-low speed until creamy, scrape down the bowl with a rubber spatula. Add the cream and beat on high until mixture is light and fluffy.

Assembling the cupcakes
1. Using the cone method, remove some of the cupcake and set aside. 

2. Drop one mini Reeces Peanut Butter Cup into the hole of the cupcake. Spoon some ganache in the hole.

3. Replace the top of the cupcake. Frost with peanut butter frosting.

Peanut Butter Cookies

This is a classic cookie that nobody could stop eating. I made 2 batches and they went so fast. The original recipe had a Hershey Kiss on it. I didn't have anything but these white chocolate candies so I used them. You could put any chocolate in the middle and it would be delicious. They are worth making, you might get addicted.


Peanut Butter Cookies

1 cup Butter 
1 cup Peanut Butter 
1 cup Brown Sugar 
1 cup White Sugar
2 Eggs 
1 teaspoon Vanilla
3 cups Flour 
1 1/2 teaspoon Baking Soda
1/2 teaspoon Salt 
1 bag of Hershey Kisses or other chocolate candy

1. Heat oven to 375 degrees. 

2. Cream together the butter, peanut butter, brown sugar, white sugar, eggs, and vanilla. Mix well. In a separate bowl, combine the flour, baking soda, and salt. Add the dry ingredients to the creamed ingredients. Mix well. 

3. Roll dough into balls and then roll on a plate of white sugar and place on an ungreased cookie sheet. Bake for 10 to 12 minutes. Let cool for a minute and then press chocolate into the center.
