Strawberry Shortcake Parfait and Secret Recipe Club

Hey! It seems like things haven't slowed down since Christmas. I've been busy planning a birthday party and its crazy. But I am so excited to share with you who I got for the Secret Recipe Club this month. The Heritage Cook!

This is one of my favorite sites to go to! She has so many fun things. First, she does Chocolate Mondays and since chocolate is my favorite thing, its perfect. Second, on her posts she has a 'hints & tips' section and its so helpful. There is always something useful. She also has a section on each of her newer posts for making the recipe gluten free. I don't need it but I'm sure its super helpful to lots of people.

I went through several recipes before deciding what I would make cause it all looks so delicious. But this Strawberry Shortcake with White Chocolate Whipped Cream Parfait looked too good to pass up.

The whole thing was so easy to make. The shortcake is soft and had a little tang from the lemon zest. The strawberries were just sweet enough to compliment the tangy-ness of the shortcake and the white chocolate whipped cream... There is just so much I could say. Its so good. Its sweet, creamy, and tastes just like light a fluffy white chocolate. It makes this shortcake parfait what it is!

Go over and see how great The Heritage Cook is!!

Strawberry Shortcake with White Chocolate Whipped Cream Parfait
Recipe Source: The Heritage Cook

Strawberries
3 cups Strawberries, hulled and diced
4 Tablespoons Granulated Sugar

Shortcakes
1 cup Heavy Cream, cold
1 1/2 cups All-Purpose Flour
3/4 teaspoon Salt
1 Tablespoon Granulated Sugar
4 teaspoon Baking Powder
1/2 teaspoon Lemon Zest
2 Tablespoons Granulated Sugar

White Chocolate Whipped Cream
4oz White Chocolate, chopped
1 cup Heavy Cream, divided
1 Tablespoon Granulated Sugar

Strawberries
Put the strawberries and the sugar in a medium bowl and mix together. Cover and refrigerate for at least a couple of hours. Every once in a while mix the strawberries.

Shortcakes
Preheat the oven to 400 degrees. In a stand mixer whisk the cream until soft peaks form. Spoon into another bowl.

In the mixer fitted with the paddle attachment put the flour, salt, sugar, baking powder and lemon zest and mix until just combined. Add the whipped cream and just beat until the mixture just comes together. Do not overbeat. Place the dough onto a floured counter and knead to finish mixing.

Roll the dough into a rectangle about an inch thick. Cut into thirds then cut each piece in half so you have squares. Place the squares onto a silpat covered baking sheet and sprinkle with sugar.

Bake for about 20 minutes or until golden.

White Chocolate Whipped Cream
In a double boiler melt the white chocolate with 1/4 cup of the cream until just about melted. Remove from the heat and whisk until smooth. Let cool to room temp.

In the bowl of your stand mixer beat the remaining 3/4 cup cream with the sugar until firm peaks form. Fold the whipped cream into the white chocolate mixture. Refrigerate.

Assembling the Parfaits
Break the shortcakes into small pieces. Place a couple of pieces in the bottom of each of your bowls. Add some strawberries and juice, some cake, and the whipped cream. Add more cake, strawberries and top with the whipped cream. Serve immediately.

Patriotic Cookies

The 4th of July is a holiday that I really enjoy. We get up at 5:30am and go see hot air balloons take off. Afterward we go to a parade and later we have a party at my Grandmas house and do fireworks. The last few years the holidays have gotten even better because our kids enjoy them too. They especially enjoy this holiday cause of all the fun and family.

I've also started to try a bunch of fun recipes. So over the next week or so I'll be sharing them with you so you'll have fun things to make at your 4th of July parties, starting out with this delicious cookie. Its easy but the effect is dramatic! People will be so impressed!

Patriotic Cookies

Strawberry Meringue Clouds

When I lived in Scotland we would go to the bakery and get meringues, it was two meringues with the most fresh sweet cream sandwiched in the middle. We would twist them apart and the joy would last twice as long.  So when I saw this dessert and realized I could make it in my own house and not have to fly half way around the world to get it, I had to make it. Turns out this is my new favorite summer dessert. The meringue is light and crispy on the outside and a little chewy on the inside. The cream on top is sweet and, well, creamy, and the strawberries top it off and make it the best dessert.

Strawberry Meringue Clouds
Recipe Source: Family Fun Magazine

for the Meringues
1 1/4 cups Granulated Sugar
1 1/2 teaspoons Cornstarch
5 Egg Whites
1/2 teaspoon Cream of Tarter
Pinch of Salt
1 teaspoon Pure Vanilla Extract

for the Topping
2 pints fresh Strawberries
1/4 cup & 2 Tablespoons Granulated Sugar
1 1/2 cups Heavy Cream

to make Meringues
Pre-heat the oven to 275 degrees. Line 2 large cookie sheets with parchment paper.

In a medium bowl stir together the sugar and the cornstarch until well blended. In a large mixing bowl for a stand mixer or using a hand mixer beat egg whites, cream of tarter, and salt until the mixture is foamy and will hold soft peaks, 2-3 minutes. Increase the speed on the mixer to med-high and slowly add 1/4 of the sugar and beat until dissolved and scrape the sides of the bowl and reapeat until all of the sugar has been added. When the whites hold a stiff peak, add the vanilla and beat until completely combined.

Using an ice cream scoop put 1/3 cup portions of the meringue, 2 inches apart on the cookie sheet. Then using a the scoop press gently into the meringue to make a well in the center. Place in the oven and reduce the temperature to 250 degrees. Bake for about an hour or until crisp on the outside but haven't really changed color. Let cool for 5 minutes on the cookie sheet then transfer to a wire rack and let cool completely.

for the Strawberries
Hull the strawberries and quarter them. Place them in a medium bowl and toss with 3 tablespoons of sugar. Mix until combined, leave out for 30 minutes then cover and refrigerate until time to serve.

for the Cream
Beat together the cream and 3 tablespoons of sugar on medium in a large mixing bowl for about 1 minute. Increase the speed to high and beat and scrape the bowl until the cream holds stiff peaks, about 3 to 4 minutes.

Assembling the desserts
Place a meringue on each plate, spoon on the whipped cream into the center and place the strawberries on top.

Strawberry Shortcake Trifle

My husbands favorite dessert is strawberry shortcake so I decided to change it up a bit by turning it into a trifle and adding bananas and vanilla pudding. It was sweet and creamy and the bananas compliment the strawberries so well. It turned out fantastic and I will be making it again soon.

1 - 9inch Angel Food Cake, cubed
4 Bananas, sliced

1 - 8oz pkg Cool Whip

1. Prepare the vanilla pudding according to the package directions. Gently fold the cool whip into the pudding.

2. In a trifle bowl place half of the cubed angel food cake, half of the pudding/cool whip mixture, half of the sliced bananas, and half of the sliced strawberries. Repeat but leave a little of the pudding mixture to top the trifle. Refrigerate and serve cold.

Strawberry Pie

Just for the record, this pie is shiny and its really hard to take a picture of something this shiny. So if you are having a hard time seeing it very well, sorry, I tried really hard to get a good picture.

I bought a ton of strawberries and I have no idea why, so I decided to make a pie. I think you normally use whole strawberries hulled when you make a strawberry pie, but I decided because I had so many strawberries to quarter them so I could fit more. I have yet to master the pie crust so I  just bought one and this pie turned out delicious, it was such a good fresh treat!

Strawberry Pie
Recipe Adapted From: Allrecipes.com

1 Pie Crust, baked
6 cups Fresh Strawberries, quartered
1 cup Granulated Sugar
3 Tablespoons Cornstarch
1/2 cup Water
2 oz Chocolate, I used white

1. Melt chocolate. Using a pastry brush paint the chocolate on the pie crust and let cool until hardened (this prevents the crust form going soggy). Arrange 4 1/2 cups of strawberries in pie crust. Mash remaining strawberries and combine with the sugar in a medium saucepan. Place over medium heat and bring to a boil, stirring frequently.

2. In a small bowl, whisk cornstarch and water. Gradually stir the cornstarch mixture into the boiling strawberry mixture. Continue to boil stirring constantly for 2 to 3 minutes. Pour mixture over berries in pie crust. Chill for at least 3 hours before serving. Serve with whipped cream.
