Cookies and Cream Brownies

I love brownies. I love cookies and cream. Together its delicious. This brownie is rich, has cookies and cream bits in the brownie an its topped with rich, creamy cookies and cream frosting. Watch out cause you wont be able to stop eating them!


Cookies and Cream Brownies

Brownie Batter, use your favorite or a mix
1 large Cookies and Cream Bar
15 Oreos
1/4 cup Salted Butter, softened
4 oz Cream Cheese, softened
1-2 Tablespoons Heavy Cream
1/2 teaspoon Pure Vanilla Extract
2 cups Powdered Sugar

1. Preheat oven according to brownie directions. Line an 8×8 pan with foil and spray with nonstick cooking spray.

2. Roughly chop the cookies and cream bar and 10 of the Oreos. Fold into the brownie batter and pour into prepared pan. Bake until brownies are set. Let cool completely.

3. In the bowl of a stand mixer beat butter, cream cheese and vanilla on medium until smooth. Add powdered sugar and beat on low until just mixed. Add one tablespoon of heavy cream and beat on high for one minute. Until light and fluffy.

4. Crush remaining 5 Oreos and fold into frosting. If frosting is too thick, add another tablespoon of cream. Spread cooled frosting on brownies.

Cookies and Cream Fudge

I really hope you are prepared for what I am going to share with you. It is AMAZING! I haven't had much fudge that is anywhere close to how good this is! Make it and I think you'll agree!


Cookies and Cream Fudge

3/4 cup Butter
2/3 cup Sweetened Condensed Milk
1 cup Marshmallow Fluff
1 teaspoon Vanilla
2 cups White Chocolate Chips
2 cups Oreos, crushed
1 cup Oreos, coarsely chopped

1. Line 9x9 pan with foil and spray evenly with cooking spray. In a saucepan combine the butter and sweetened condensed milk. Heat over medium until it starts to boil, stir constantly. Keep stirring for 2 more minutes while it boils.

2. Remove pan from heat and stir in the marshmallow fluff, white chocolate chips, and the 2 cups crushed Oreos. Spread the mixture into prepared pan and cover with the coarsely chopped Oreo's on top and press softly into the fudge.

Cookies n Creme Chocolate Cookies

I may have a new thing for cookies and cream. Putting the candy bar in a cookie, a chocolate cookie, only makes it better. These are so good.



Cookies n Creme Chocolate Cookies

1 cup Butter
1 1/4 cups Granulated Sugar
2 Eggs
1 1/2 teaspoons Vanilla
1/2 cup Cocoa Powder
2 1/4 cups All-Purpose Flour
1/4 teaspoon Salt
1 teaspoon Baking Powder
1 cup Mini Chocolate Chips
1 - 6.5oz Cookies and Creme, coarsely chopped

1. Preheat oven to 350 degrees. 

2. Cream butter and sugar together until light and fluffy. Add in eggs and vanilla and beat until combined. Turn your mixer to low and slowly add in cocoa until well incorporated. Then add in the flour, baking powder and salt and mix on low until just combined. 

3. Add your chopped Cookies n Creme bar and the mini chocolate chips. Fold them in until fully combined.

4. Drop large spoonfuls of the dough onto a lined baking sheet. Bake for about 12 minutes or until the edges set. Cool for 3 minutes on the baking sheet and then transfer to a wire rack.

Cookies and Cream Cupcakes

I try and try new cupcake recipes and this is one of my favorites. The cake is so soft and the Oreo bits in the cake add extra flavor and texture. And the frosting is so smooth and creamy, just extra deliciousness.



Cookies and Cream Cupcakes

For the cupcakes:

24 Oreo halves, with cream filling attached
2 1/4 cups All-Purpose Flour
1 teaspoon Baking Powder
1/2 teaspoon Salt
8 Tablespoons Butter, room temperature
1 2/3 cups Sugar
3 Large Egg Whites, room temperature
2 teaspoon Vanilla Extract
1 cup Milk
20 Oreos, coarsely chopped

For the frosting:
8 oz Cream Cheese, room temperature
6 Tablespoons Butter, room temperature
1 Tablespoon Vanilla Extract
4 cups Powdered Sugar, sifted
2 Tablespoons Heavy Cream

For garnish:

24 Oreo cookie halves
Oreo Crumbs

Cupcake...
1. Preheat oven to 350 degrees. Line two cupcake pans with 24 liners. Place an Oreo half in the bottom of each cupcake liner, cream side up. 

2. In a medium bowl add flour, baking powder and salt. Stir together with a fork and set aside. In the bowl of an electric mixer, combine the butter and sugar. Beat together on medium-high speed until light and fluffy, approx. 2 minutes. Blend in the egg whites one at a time, beating well after each addition. Blend in the vanilla extract. With the mixer on low speed, beat in half of the dry ingredients just until incorporated. Add the milk and beat just until combined, then mix in the remaining dry ingredients. Gently fold in the coarsely chopped Oreos with a rubber spatula until combines, do not to over mix.

3. Scoop the batter evenly between the prepared cupcake liners. Bake for 18-20 minutes, rotating the pans halfway through, until a toothpick in the center comes out clean. Cool for 5 minutes in the pan, then transfer to a wire rack to cool.

Frosting...
1. Combine the cream cheese and butter in the bowl of an electric mixer and beat on medium-high speed until smooth, about 1 minute. Add the vanilla extract. Beat in the powdered sugar until smooth, 1-2 minutes.

2. Add the heavy cream to the bowl and beat on med-low speed just until incorporated, then increase the speed to medium-high and whip for 4 minutes, scraping down the sides of the bowl as needed.

3. Frost the cooled cupcakes as desired. Sprinkle with Oreo crumbs and garnish with Oreo halves.
