Sugar Cookie Caramel Apple Crisp

Its officially fall and one of my favorite fall desserts is apple crisp. Its different because it has a sugar cookie crust. Its loaded with soft, sweet, caramel cinnamony apples, and it has a crunchy oatmeal topping with salted caramel on top. I'm going to go make it again cause I cant get enough!


Sugar Cookie Caramel Apple Crisp

Crust
17oz Sugar Cookie Dough (I used this recipe)
1/2 cup All-Purpose Flour

Filling
3 1/2lbs Granny Smith Apples
1/2 cup Granulated Sugar
2 Tablespoons All-Purpose Flour
1 teaspoon Cinnamon
1/2 teaspoon Nutmeg
3/4 cup Caramel Topping (I used this one)

Topping
1 cup All-Purpose Flour
1/2 cup Brown Sugar
1/2 cup Granulated Sugar
1 teaspoon Pure Vanilla Extract
1 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1/2 cup Butter

1. Preheat oven to 350 degrees. Spray a 10-inch cheesecake pan.

2. Combine the cookie dough and the flour. Press it into your prepared pan and up the sides.

3. In a large bowl mix the apples with the sugar, flour, cinnamon, and nutmeg. Spread them evenly over the crust. Drizzle the caramel over the apples. Cover with tin foil and cook for 45 minutes.

4. In a separate small bowl combine the topping ingredients except the butter. Cut the butter into the mixture until all the flour is moist.

5. Take the crisp out of the oven and remove the tin foil. Sprinkle the crumb mixture on top Put it back in the oven, uncovered, and bake for an additional 35 to 40 minutes until the top is brown.

6. Let the pie cool before serving. Slice and drizzle with more caramel.

Apple Dumplings

Its almost Thanksgiving and so I am getting ready to start making pies but I had to share my new favorite fall desert. It is one of the easiest things I think I've made in a very long time.  The outside is crispy and flaky, the apple is soft and a little tart, and the sauce, oh the sauce, its sweet, creamy, and tastes like cinnamon.

Apple Brown Betty


I shared this at Sawdust and Embryos last week and I had to share it with you!

Have you ever heard of Apple Brown Betty? I think I’d heard of it but I had no idea what it was or what was in it. So while search through apple recipes I came upon this recipe. I was a little hesitant cause there is bread in it people. Bread. But as it turns out its pretty delicious and you’ll want more. Promise.


Apple Brown Betty

3 Granny Smith Apples
7 slices Wheat Bread
3/4 cups Butter, Salted
1 1/2 cup Brown Sugar, packed
1 teaspoon Cinnamon
4 Tablespoons Water

1. Preheat your oven to 375 degrees. Slice bread strips and then into a small pieces. Peel and thinly slice your apples.

2. In a small bowl combine your cinnamon and brown sugar. Generously coat your pie plate with butter. Then add 1/2 cup of brown sugar/cinnamon mixture, 1/3 of the apple slices, and 1/3 of the breadcrumbs. Repeat the layers two more times, ending with the breadcrumbs. 
 
3. Slice butter and place the slices over the breadcrumbs. Sprinkle the water over the butter and then sprinkle little more brown sugar over the butter. Cover in foil and bake for 45 minutes. Remove the foil and bake 10 more minute to brown the top. Serve warm with sweet whipped cream.

Barvarian Apple Torte

My husband came home from work last week and said they were having an Oktoberfest potluck at work and he signed up to bring a dessert. So I did a search for Oktoberfest and I came across this recipe. I have only heard about Oktoberfest and so I don't even know if this would be appropriate. But this dessert was a hit! It has a crunchy crust, a creamy sweet cream cheese filling, and its topped with sweet cinnamon apples. If you have extra apples you don't know what do to with you should try this recipe!


Bavarian Apple Torte

Crust
1/2 cup Butter, room temp
1/3 cup Granulated Sugar
1/4 teaspoon Pure Vanilla Extract
1 cup All-Purpose Flour

Filling
1-8oz pkg Cream Cheese
1/4 cup Granulated Sugar
1 Egg
1/2 teaspoon Pure Vanilla Extract

Topping
6 Granny Smith Apples, peeled and sliced
1/3 cup Granulated Sugar
1/2 teaspoon Cinnamon

1. Preheat oven to 450 degrees. Cream together butter, sugar, vanilla, and flour. Press crust mixture into the bottom of a 9-inch springform pan. Set aside.

2.In a medium bowl mix the cream cheese and sugar. Add in egg and vanilla. Pour the cheese mixture over the crust.

3. In a microwave safe bowl toss apples with the sugar and cinnamon. Heat in the microwave on high for 3 minutes. Spread the apples over the cream cheese mixture.

4. Bake for 10 minutes. Reduce the heat to 400 degrees and continue baking for 25 minutes. Continue baking until its lightly browned. Cool before removing from pan.

Pumpkin Apple Muffins

I am on a small quest to find new pumpkin recipes. The only ones I have are pumpkin chocolate chip cookies and breads. I also need to find a use for some apples I bought to be a decoration and I am realizing that that's a nice thought but now they are going to go bad and what a waste of really delicious apples that would be. So luckily while looking for a new pumpkin recipe I found this and it not only has pumpkin but it also had apples. 

I haven't ever made muffins so I was so interested to make these. They turned out so moist and flavorful. My girls scarfed them down. It sounded like an odd combination but its definitely going to be a recipe I make again.


Pumpkin Apple Muffins

Muffins:
2 1/2 cups Flour
2 cups Granulated Sugar
1 Tablespoon Pumpkin Pie Spice
1 teaspoon Baking Soda
1/2 teaspoon Salt
2 Eggs, lightly beaten
1 cup Pumpkin Puree
1/2 cup Vegetable Oil
2 cups Apple.. peeled, cored and chopped

Streusel Topping:
2 Tablespoons Flour
1/4 cup Granulated Sugar
1/2 teaspoon Cinnamon
4 teaspoons Butter

Preheat oven to 350 degrees. Line 20 muffin cups with paper liners.

For Muffins...
In a large bowl whisk together flour, sugar, pumpkin pie spice, baking soda and salt. In a small bowl mix together the eggs, pumpkin and oil. Add the pumpkin mixture to the flour mixture and stir until just combined. Fold in chopped apples. 

Spoon batter into prepared muffin tin and fill 3/4 full.

For Streusel...
In a small bowl combine flour, sugar and cinnamon. Cut in the butter until coarse crumbs form. Sprinkle evenly over muffins.

Bake muffins for 25 minutes or until a toothpick inserted comes out clean.

Glazed Cinnamon Apples

I love ice cream, its not much of a secret its one of my favorite desserts. But I am very boring, I have vanilla ice cream with caramel and chocolate sauce. I enjoy it but I decided to change things up a bit, still vanilla ice cream but with some apple topping. It turned out amazing. The apples have the perfect amount of cinnamon, nutmeg and sweetness. It might just replace my chocolate and caramel regulars.


Glazed Cinnamon Apples

6 Large Tart Apples
2 Tablespoons Lemon Juice
1/2 cup Brown Sugar
1/2 cup Granulated Sugar
2 Tablespoons Flour
1 teaspoon Ground Cinnamon
1/4 teaspoon Ground Nutmeg
6 Tablespoons Butter, melted
Vanilla Ice Cream

1. Peel, core and cut each apple into 8 or 10 wedges and place in a crockpot.

2. Drizzle lemon juice over apples. Combine both sugars, flour, cinnamon, nutmeg and sprinkles over apples. Drizzle butter over the top. 

3. Cook on low for 3 hours, until the apples are tender. Serve with ice cream.

Carmel Apple Pie

Thanksgiving is over, let the madness of Christmas begin. But before I start making yummy winter foods, I have some pie recipes that I made for Thanksgiving that I am going to share this week. These pies would also be a great addition to a Christmas party. Today's is a super yummy apple pie, the best part is the caramel, it adds a little extra sweetness.


Caramel Apple Pie

1 whole Pie Crust
7 Cups peeled & sliced Granny Smith Apples
½ whole Lemon, juiced
½ cup Sugar
4 Tbsp Flour
¼ tsp Salt
½ cup Flour
12 Tbsp Butter
1 cup Brown Sugar
½ cup Quick Oats
¼ tsp Salt
½ jar Caramel Topping

1. In a bowl mix peeled apples, lemon juice, sugar, flour and ¼ teaspoon salt. Set aside. 

2. Crumb Topping - Cut the butter into the flour with a pastry cutter, then add in brown sugar, oats, and ¼ teaspoon salt.

2. Add apples to prepared pie shell and top with crumb topping. Cover crust edges with aluminum foil and bake on a cookie sheet in a 375 degree oven for 25 minutes. Remove foil from crust and place back into the oven for another 30 minutes.

3. Remove the pie from the oven and pour ½ jar of caramel topping over the top. Allow to cool slightly before serving.

Caramel Apple Cheesecake Bars

We were going to visit my cousins, who just happen to be very big boys, and the idea that I could try a recipe and not have any left over to bring home is all the motivation I need to try something new. I went to Costco and saw all of the apples and decided that an apple dessert sounded really good. This is really easy and is worth the work to cut up the apples into little bits. This is the perfect fall dessert!


Carmel Apple Cheesecake Bars

Crust:
1 cup Flour
1/4 cup firmly packed Brown Sugar
1/2 cup Butter, softened

Cheesecake Filling:
3 - 8 oz pkgs Cream Cheese, softened
3/4 cup sugar, plus 2 Tbsp, divided
3 large Eggs
1 1/2 tsp Vanilla

Apples:
3 Granny Smith apples, peeled, cored and finely chopped
1/2 tsp Cinnamon
1/4 tsp Nutmeg

Streusel Topping:
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup quick cooking oats
1/2 cup (1 stick) butter, softened

1/2 cup Caramel Topping

1. Preheat oven to 350 degrees F.

2. In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender (or 2 forks) until mixture is crumbly. Press evenly into a 9x13 baking pan lined with heavy-duty aluminum foil. Bake 10 minutes or until lightly browned.

3. In a large bowl, beat cream cheese with 3/4 cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.

4. In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture. Combine ingredients for Streusel topping and sprinkle evenly over cream cheese mixture. Bake 40-45 minutes, or until filling is set. Drizzle with caramel topping and let cool. Refrigerate several hours. Serve cold and enjoy!
